Venison Workshops: Butchery and Outdoor Cooking
Join Tinder Sticks for a day learning about deer.
In the morning you will learn about the six species of deer that live in Britain and how to recognise the tracks, trails and signs they leave behind, with a focus on local populations of fallow and muntjac. Understand the impact of deer on the local environment and the need for management strategies.
You will observe a field butchery demonstration before getting hands on and having a go yourself. Elevenses will be venison fillet pan fried with garlic and thyme, straight from the carcass onto your fork. You will learn about the different ways to cook the different cuts of meat before enjoying a meal of venison stew at the end of the day. All meat butchered will be taken away by participants - clear room in your freezer!

From the A10 take the Broxbourne exit. At the roundabout take the first exit sign posted Broxbourne. Follow this road over all the mini roundabouts until you reach the T junction traffic lights in Broxbourne. At these lights turn right. Follow this road, passing the train station on the left and Broxbourne Riverside on your right. Just past the entrance to Broxbourne Riverside you’ll find the entrance to the campsite in the wooded tree line on the left. When arriving at the site with your car please park in the car park that is a short walk away from the main camping area.
